You are down in your cellar and notice a pleasant fruity aroma. It is much too early for the wine you are making to be ready, but it already smells divine. When you uncork a test bottle, a rich aroma of honey bubbles forth.

You inhale the sweet smells. It seems as though you have a winner on your hands. This would be wonderful for your winery, boosting your image as a fine winemaker.

You grab a few bottles and tuck them under your arm. You want to take them up to the wine shop, and begin selling them right away.

But should you? According to your schedule, it's far too early for this wine to be ready.
