Winemakers need to mix proper proportions when they are making wine, and they need to calculate things such as pH content.

"You need to figure out what is in the wine," says winemaker Elias Phiniotis.

"This requires a knowledge of chemistry and of math. Making wine requires these technical skills just like other food sciences," he says. "You can always learn more."

You are a winemaker who has just moved from California, where you had been making wine for years, to Ontario, where you have been hired on by a large and prestigious winery.

You know a lot about making wine, but are alarmed when you find that the measurements are in the metric system, and the temperatures are recorded in Celsius.

  1. You have a 20-gallon carboy. A carboy is a large glass container where the wine is racked and fermented. How many liters can this carboy hold?
  2. You want to make sure the wine cellar is kept at a constant temperature of 74 F. What temperature is this in Celsius?

Remember:

3.7 liters = 1 gallon

To convert Fahrenheit to Celsius: subtract 32, multiply by 5 and divide by 9.
